Chicken and Dumplings Like Grandma Made
Ok, you’re ready to make chicken and dumplings like you remember them?
Here’s what you’re going to need: a balanced homemade broth. Perfectly prepared juicy chicken. And from-scratch dumplings that aren’t too runny, soggy, heavy, light, sticky, chewy, doughy, or anything else-y.
Whew. Let’s go.
Broth, Chicken, Veggies, Dumplings…
The day before you’re going to make your chicken and dumplings recipe, make your broth. Bring it to a boil in a big stock pot with vegetables — celery, onion, carrots, salt, etc. Let the chicken & broth simmer for several hours before taking out the chicken and straining the remaining broth. Put the chicken and the stockpot in your roomy refrigerator.
Oh, you weren’t planning on a multi-day adventure? Hm.
On day two, skim the fat off of the pot full of broth. In a second large pot, melt some butter and the chicken fat and add flour. Slowly add your chicken broth to the mix while stirring to get the consistency you’re looking for. Remember — not too thin, not too thick. Add your chicken and simmer.
Aaaannnd… you’re done! Just kidding. You still have to make the dumplings.
