4 Healthy Bison Steak Recipes

To be perfectly honest, I had never been a big fan of bison and always prefer beef over bison. The latter half of that statement is still true, but the first half has changed. Over the years, we have had lots of requests for bison, but we never found a supplier where we felt the quality was up to our level. Earlier this year, we revisited the whole bison thing and found a producer that we feel is raising top quality animals. The result is our new line of Golden Plains Bison.

Our Bison Steaks are extra lean and perfectly trimmed, absolutely bursting with bold steak flavor and loaded with natural goodness. Grass-fed, grain-finished Bison means absolutely no antibiotics, hormones, or GMO feed, and it means that we’ve maintained the integrity of a real American tradition. As with all our steaks, our Bison is aged to perfection and cut by our master butchers. Try some of our bison which is rich with protein and minerals for a healthy, hearty meal.

As you can imagine, I have been cooking a lot of bison lately leading up to this rollout. I have also been working on some recipes that work well with our bison steaks. My goal is to complement the flavor of the bison and still keep the recipes low fat so as not to negate any of the health benefits of the bison. Below are the resulting bison steak recipes.

Bison Top Sirloin

1. Skillet Roasted Bison Top Sirloins with Wild Mushrooms, Roasted Shallots and Fresh Thyme

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Serves 4

Ingredients:
4 each Omaha Steaks Bison Top Sirloins
2 Tbsp. Omaha Steaks Private Reserve Seasoning
3 Tbsp. Canola Oil
1 Tbsp. Chopped Roasted Garlic
1/4 cup Chopped Roasted Shallots
8 oz. Wild Mushrooms Sliced
Shiitake Mushrooms
Cremini Mushrooms
Hedgehog Mushrooms
1 tsp Fresh Thyme Minced
1/2 tsp Sea Salt
1/8th tsp Ground Black Pepper
1/4 cup Red Wine
4 Large Thyme Sprigs

Directions:
1. Preheat oven to 300 degrees.
2. Heat a iron skillet with canola oil over high heat.
3. Generously season the sirloins with Omaha Steaks Private Reserve Seasoning.
4. Brown steaks for 2-3 minutes on first side or until well browned.
5. Flip over steaks and add the roasted garlic, roasted shallots, and wild mushrooms.
6. Place pan with steak in heated oven and roast until steaks are Medium Rare, (about 10 minutes for a 1-1/4″ thick steak.)
7. Remove pan from oven, add fresh chopped thyme and sprinkle the mushrooms with sea salt and black pepper.
8. De glaze the pan with red wine and serve steaks with mushrooms over the top.
9. Garnish with a fresh Thyme Sprig

Bison Ribeyes

2. Grilled Bison Ribeye Steaks with Chimichurri Salsa

Prep Time 30 minutes
Cook Time 15 minutes
Total Time 45 minutes
Stars 4

Serves 4

Ingredients:
4 each Omaha Steaks Bison Ribeye Steaks
Sea Salt and Fresh Ground Black Pepper to Taste
1 Cup Chimichurri Salsa (See below)
4 Cilantro Sprigs

Directions:
1. Season and grill the steaks to desired doneness.
2. Top each steak generously with the Chimichurri Salsa.
3. Garnish each steak with one cilantro sprig.

Chimichurri Salsa
Makes 1 Cup

1/2 cup Green Onions, minced
2 tsp. Fresh Oregano, minced
1/4 Cup Red Bell Pepper, minced
1/4 Cup Cilantro, minced
1 Tbsp. Jalapeno, minced
2 tsp. Fresh Garlic, minced
1/2 tsp. Sea Salt
1/4 tsp. Fresh Ground Black Pepper
1 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Red Wine Vinegar
1/2 each Lime, Juiced

Combine all ingredients and mix well.

Bison Strip

3. Peppercorn Crusted Bison Strip Loin with Tri-Colored Grilled Peppers and Onions

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Serves 4

Ingredients:
1 ounce Olive oil
4 each Omaha Steaks Bison Strip Loins
1 tablespoon Whole Peppercorns2 teaspoons Coarse Sea Salt
1 each Yellow Bell Pepper Julienne
1 each Green Bell Pepper Julienne
1 each Red Bell Pepper Julienne
1 each Red Onion Julienne
4 each Large Rosemary Sprigs

Directions:
1. In a spice grinder or a clean coffee grinder combine the peppercorns and the salt and grind until the pepper is coarsely ground. Do not over grind.
2. Place the ground pepper and salt on a plate.
3. Brush each side of the steaks with olive oil and then press the steaks in the plate with pepper trying to get as much pepper and salt to stick to each side as possible.
4. Heat the olive oil in a Sautee pan until smoking.
5. Place the Strips in the pan and sear for 1-2 minutes on each side, until brown.
6. Finish in a 225°f oven for 10-15 minute until desired doneness is achieved. 10 minutes for a 8oz strip and 15 minutes for a 12oz strip will yield a Medium Rare Steak. (IE for medium rare use130°f internal.)
7. While steak is finishing in oven preheat a cast iron skillet on medium.
8. Add julienne peppers and onion and cook while stirring until seared but still al dente.
9. Garnish each steak with a ribbon of peppers over the top and nice bushy sprig of rosemary.

Bison Filet

4. Grilled Bison Filet Mignon with Roasted Leeks and Fennel

Serves 4

Ingredients:
4 each Omaha Steaks Bison Filet Mignons
2 Tbsp Olive Oil
2 tsp Omaha Steaks All Natural Seasoning
1 recipe Roasted Leeks and Fennel

Directions:
1. Preheat grill on high.
2. Brush steaks with olive oil and season with Omaha Steaks All Natural Seasoning.
3. Place steaks on the grill and cook to desired doneness.
4. Serve with the Roasted Leeks and Fennel

Roasted Leeks and Fennel

Ingredients:
1 Tbsp Olive Oil
1/2 yellow Onion Sliced
1 Tbsp chopped Garlic
2 large leeks halved and sliced 1/4″ thick
1 Large Bulb Fennel Sliced 1/8″ thick
1 tsp Sea Salt
1/4 tsp Fresh Ground Black Pepper
1 Tbsp Butter

Directions:
1. Place all in a roasting pan.
2. Roast in a 450 oven 1 hour
