A Paleo Thanksgiving Feast

This Thanksgiving spread has all the flavors of the holiday season but without grains or gluten. It’s definitely possible to enjoy the festivities while eating healthy at the same time. These 5 sides are the perfect complement to an Omaha Steaks Whole Basted Turkey that wont leave you feeling drowsy after enjoying this holiday meal!

Turkey - New

Omaha Steaks 10 lb. Whole Basted Turkey

Prep Time: 25 minutes
Cook Time: 1 hour and 45 minutes
Serves 4-6

1. Mushroom Gravy

– Turkey drippings
– 2 tbsp dried mushrooms, rehydrated in ¼ cup warm water
– ½ cup water
– 2 tbsp ghee
– 2 tbsp arrowroot powder, dissolved in ¼ cup warm water

Combine drippings, mushrooms, water and ghee in a saucepot. Turn on heat to medium high and bring to a boil. Reduce heat and let it simmer for 5 minutes. Add dissolved arrowroot and simmer for 2 more minutes. Remove from heat and pour into a gravy boat.

2. Sautéed Mushrooms

– 1 pound button mushrooms
– 3 oz shallots
– 1 tbsp ghee

Melt ghee in a sauté pan over medium heat. Add mushrooms and shallots. Sauté for 5- 8 minutes until shallots have softened. Remove from pan and place in a serving bowl.

Jenny Castaneda -Omaha Steaks Turkey Spread 13. Roasted Acorn Squash

2 acorn squash, sliced into 1” thick pieces
1 tbsp ghee, melted
1 tbsp garlic powder
½ tsp sea salt
2 stalks green onions, chopped

Preheat oven to 375 F. In a foil-lined baking sheet, arrange acorn slices and drizzle with ghee. Season with garlic powder and sea salt. Bake for 20 minutes on the first side. Flip and bake the other side for 8 minutes. Place in a serving bowl and top with green onions.

4. Herbed Cauliflower Stuffing

1 head cauliflower, chopped
1 green apple, chopped
1 small onion, chopped
2 ribs celery, chopped
¼ c dried cranberries
¼ c raw pecans, chopped
2 tbsp Italian herbed seasoning
3 tbsp butter, cubed

Preheat oven to 375 F. Combine all ingredients in a baking dish and cover with foil. Bake for 45-50 minutes. Let it cool for 5 minutes before serving.

5. Orange Cranberry Sauce

4 cups fresh cranberries
Juice of 1 lemon
4 slices of orange
½ cup water
6 tbsp honey
½ tsp cinnamon

Combine cranberries, lemon juice, orange and water in a saucepot over medium heat. Stir until cranberries have softened. Add honey and cinnamon. Simmer for 5 minutes. Remove from heat and let it cool or chill in the fridge before serving.
