Omaha Steaks Buffalo Wings and Healthy Broccoli Crunch Slaw

I have a confession: I have an insane addiction to wings. All of them. I don’t discriminate, I am an equal opportunity wingist. When I was pregnant I craved wings as if they were life itself. I dreamt and salivated at the thought of them and if they were on a table… it was all over. I had no self control. They were going to get obliterated, end of story. I stocked up on BBQ wings as if they was going out of business. I only ate them when no one was home… it was my guilty pleasure.

That and my Honey Nut Cheerios obsession at 2am…but that is another story.

Wings get a really bad rep. Chicken skin is not the devil, and if the wings are baked most of the fat renders off and you are left with crispy goodness. No soggy, fat drenched orange lumps for me. But ranch…ranch is not so good for you. So when I received my latest shipment of Omaha Steaks Buffalo Wings I was given the slightly daunting task of creating a side dish and possible dip that one would not ordinarily pair with buffalo wings.

These wings…they looked really good. I felt my addiction coming back to me. They are already cooked and sauced, ready to be baked off straight from the freezer if you can’t wait. A quick taste of the sauce and I was hooked. I stole one immediately from the oven and devoured it, burning my tongue, cheek, lips and probably esophagus in the process. But they were so, so good. There was a super tangy spiciness that I needed to mellow out with something. So I did something unorthodox and  grabbed my Greek Yogurt. My hands started reaching for things I did not yet understand a need for. Before I knew it, I had created a lovely creamy dip for my wings.  I found that my dressing was not enough…I needed something crunchy and creamy. And at that moment one of my favorite side dishes was born: a crunchy slaw lightly tossed with sweet cranberries, crispy almonds, savory scallions and my creamy dressing. When I served this up to my crowd of friends who had gathered for some lame football game at my house I was pleased to see my dressing being mopped up faster than the ranch.

And the slaw? Well that was a mighty serious contender to the deli spinach dip someone brought over. In fact, it won.

I think I deserve those wings now…no?

 

Dressing

Healthy Broccoli Crunch Slaw

Ingredients
  • 1 cup of Full Fat Greek Yogurt (you can use fat free or low fat)
  • 4 T full fat mayo
  • 4 T finely chopped cilantro
  • 1 garlic clove, minced on the microplane
  • Salt and pepper to taste.

Instructions
  1. Combine all the ingredients in a large bowl and set aside.

 

Slaw

Healthy Broccoli Crunch Slaw

Ingredients
  • 1 package of Omaha Steaks Hot Wings
  • 1 bag of broccoli slaw mix (feel free to use regular cole slaw mix if that’s how you like it)
  • ½ cup of dried cranberries
  • 3 T slivered or sliced raw almonds
  • 3 scallions, sliced thinly
  • 3 pieces of crispy bacon, crumbled
  • ½ of the dressing
  • Salt and Pepper to taste
  • Toss everything together with the dressing. If you require more dressing go ahead and add it a little by little. Remember it will get soggier as it marinades.
  • Allow to rest in the fridge for 2-24 hours prior to serving.
  • Reserve remaining dressing as a dip for the gorgeous Omaha Steaks Hot Wings.
  • Serve hot wings on top of the slaw.

Instructions
  1. Toss everything together with the dressing.
  2. If you require more dressing go ahead and add it a little by little.
  3. Remember it will get soggier as it marinades.
  4. Allow to rest in the fridge for 2-24 hours prior to serving.
  5. Reserve remaining dressing as a dip for wings.
  6. Serve hot wings on top of the slaw.
