Roasted Vegetable Lasagna with Kale Salad

When I looked at the back of the box on the Omaha Steaks Roasted Vegetable Lasagna, I was amazed and excited by all of the different vegetables that were included in it! So many vegetable lasagnas are just one vegetable or are just plain boring. This lasagna is certainly not boring! With all of the roasted vegetables included in this lasagna, you will surely find it to be hearty, filling and completely delightful.

So instead of just telling you it had an amazing filling, why don’t I tell you what was actually in it!? We’ve got spinach lasagna noodles (so good), fire roasted artichoke hearts, onions, green zucchini, yellow zucchini, red peppers, tomato, garlic, tomato sauce and my favorite ingredient of all time: cheese.

I made this lasagna for a girl’s night with my mom and one of my best friends. This is perfect for a girl’s night because even though it says it serves two, it really served all three of us quite well (even enough for seconds!) and it paired so well with the kale salad and a glass of wine, it made for a great centerpiece to a fabulous time amongst friends.

The best part about this meal is how easy it is. Usually lasagna is an arduous task, taking hours to assemble it and bake it. It’s one of those comfort foods that I don’t really enjoy that often because I’m too busy to actually take the time to put it together. It’s a total classic, at least in my opinion…but sometimes it’s just not worth all the time and effort. This lasagna solves that problem! It comes in its package frozen, and all you have to do is pop it in the oven or the microwave. You don’t even have to thaw it. Seriously! I loved that it was vegetarian, since I usually make a meat-filled version to keep my fiancé happy, so this was a really nice change that both my mom and best friend enjoyed thoroughly. To give you a little preview in to how the lasagna went off…there wasn’t any left at the end!

So next time you’ve got a girls night coming up, break out this delicious easy meal, throw the kale salad together while the lasagna cools, and open up a lovely bottle of wine. Enjoy each other’s company without the hassle of a complicated meal, and finish up with some dessert, you deserve it!

 

For Vegetable Lasagna: Follow instructions on package and let stand while you make the kale salad.

 

Kale Salad

Ingredients
  • 3-4 oz kale
  • 1-2 T olive oil
  • Juice from one half lemon
  • 1 small shallot, diced
  • 1 T freshly grated parmesan cheese
  • Sea salt flakes

Instructions
  1. Combine all ingredients in a bowl (starting with 1 T of olive oil and using second T if salad needs it)
  2. Mix until incorporated.
  3. Top with sea salt flakes.
  4. Add cheese if desired
